Buttermilk Green Goddess Dressing

 
Move over ranch, this creamy dressing is the best way to use up any sad herbs wasting away in your fridge. Skip the water and use it as a dip, or thin until its just pourable and toss with your favorite greens.

Total time: 10 minutes

ingredients

  • ½ cup lime aioli, or any prefered substitute
  • ½ cup cultured buttermilk
  • 1 cup of mixed fresh chopped; chives, parsley, and tarragon
  • ½ lemon, juice and zest
  • 1 tsp garlic, minced
  • 2 sardine, or anchovy fillets (optional)
  • 2 egg yolks (optional)

Method

In a food processor, combine all ingredients except buttermilk. Process until herbs are fine and the dressing has a green tint. While food processor is running, pour in buttermilk to thin to desired consistency.

Serve chilled as a dressing or as a dip.
